The restaurant is known as a smokehouse (literally "house of smoke") because it offers meats subjected to a special smoking process. The meat is first flavored with a special blend of spices, then cooked at low temperatures for many hours according to the principles of low & slow cooking, and finally smoked in ovens specifically designed for this cooking method. The result of this process is an extremely tender, juicy meat that retains its flavor and is enriched by the wood used during smoking.
A wide selection of craft beers complements the dishes.
The fixed menu, consisting of five beers produced by Birra Salento, is expanded monthly with three additional beers offered on a rotating basis by the brewery of the month.
